Last night, amidst the cold, bitter winter, I triumphantly made...
wait for it....
a margarita pie! A margarita pie that did not turn into a graham cracker crust full of soupy, lime sugariness. Today was my turn to bring snacks for the team meeting, so I thought I'd try one more time to do this. My last foray into the world of folding cool whip into mixtures.
Here is how it's done:
Gather your materials: 8oz cream cheese, one can sweetened, condensed milk (love in a can), limeade, and a cool whip.
Do not use whipped cream cheese. It will not work if you do. I have three graham cracker bowls of margarita soup to prove it.
Whip softened cream cheese until light and fluffy. If you're anything like me, you will realize halfway through that you didn't soften the cream cheese enough. Then you'll soften it and do it right. Oh, and don't use whipped cream cheese. Did I mention that already?
Blend in sweetened condensed milk and 1/2 can of limeade. Here's the hard part: the self-control to refrain from just drinking this delicious goodness straight out of the bowl. It's hard man. I almost needed an intervention.
Fold 1/2 tub of cool whip into the mixture. Gently. If you need lessons, my aunt is a good teacher of things like that. I'm an excellent folder due to her instruction.
Oh, and the finger stroke through the middle is merely to show you how thick the consistency should be. Seriously.
It will look like this when you're done. This is when you scoop it lovingly into the graham cracker crust. You whisper sweet nothings in its ear and you cross your fingers and your toes.
you forgot to add that just a spoonful of tequila makes it even better per the 9 yr old cook at my house...
