I have a new lunch obsession. They're called Chicken Packets, and I'm actually renaming them to be lunch packets. Because I make them on Sunday nights, and then have them all week for lunch. And this week, they don't have chicken in them! They're also very simple to make, and I love that as well!
Let's start with ingredients. For this first batch, I used cream cheese and (canned) chicken. Don't tell anyone about that (canned) part. I was in a rush and didn't have anything thawed. This also requires 2 cans of crescent rolls and some butter and bread crumbs.
I put the chicken and cheese in the bowl, along with about a Tbsp of milk (not sure what for, but that's what the recipe said) and a smattering of parmesian cheese, because I love me some cheese in almost any shape or form.
When you mix it all up, it will look a bit like this. However, you must not taste it, even just a lick off of your fingers. If you do, you will want to consume your entire mixture, and then you will have nothing to put on your crescents.
Lay out your crescents so they form rectangles. This is one package. This looks better than the ones I made last night. Also, I didn't grease the pan, but probably should have.
Pile on the filling. I tried to stay away from the edges since I knew I'd be cinching up the sides with the top layer of crescents.
Speaking of putting on the top layer and cinching up the sides...
And while you're at it, brush on melted butter, and sprinkle on the bread crumbs.
When you take them out of the oven, they will look so scrumptious!
You will want to eat them all. At once. And then you won't have anything for lunch.
After they've cooled, put them in individual baggies. Then, every morning is just grab and go. One morning, I forgot to take them, so that was the one day this week that I didn't have them for lunch. Then, I remembered that I have a refrigerator at school, and why don't I just take them all at once?
I took these to school last week, and we all talked about them in the lounge. One of the kids said that she'd make them, but her kids don't like cream cheese. That gave me the brilliant idea that I could change up the ingredients in the inside, and then have something new every week!
For example, this week it's going to be a little bit Italian. I put some sausage, pepperoni, mozarella cheese, and pizza sauce in as the filling. It didn't come out as well aesthetically as last week, but I'm hoping tomorrow it will taste super-yummy.
Next week, I'm going to try ham and swiss, and after that, a little Mexican flair with taco meat and that Mexican shredded cheese.
We'll see.
I call these Chicken Crescent Squares and I agree! They are awesome!! They are also MUCH better when you don't use canned chicken.
